To the south in Manalapan, the Ritz-Carlton Palm Beach has a chef who thinks of his dining rooms as stand-alone restaurants that just happen to be attached to an upper-class hotel. Chef Ryan Artim offers locals and visitors a taste of the new dining that’s changing how travelers view hotel food.
“We’re trying to stay true to our values, while reaching out to our new audiences,” he says. In decades past, the typical hotel diner was a senior, retired, or on business. Today’s guest is younger – in their 30s or 40s – and often has a family in tow. They want choices at mealtime, and down here, they want a Florida experience.
“The terrace at Temple Orange is very popular,” he says, “as is Breeze, the pool restaurant. Sitting outside, dining on a lobster grilled cheese or a salad while you’re watching the ocean, taps into what the customer wants.”
The fine-dining restaurant, Angle, is set up for both casual nibblers who want just a glass of wine and appetizer, and those who would make a big night out, gathered with friends around the centerpiece onyx table.
“You can get three courses at Angle for $35. Or you can go all out with wines and several courses,” the chef says. “We want the restaurants to be less formal and intimidating.”
Banquet and reception menus have changed, too, Artim says. “We’re becoming very creative with a lot of foods done fresh.” Things like crab-cake stations, a down-home barbecue with sliders, or ice cream cones passed by servers are on banquet and party menus. The chef says it’s all about pleasing the guest. “Sometimes it’s a challenge, but it’s really exciting.”
