Ritz-Carlton, Kapalua offers new garden tours

The Ritz-Carlton, Kapalua has introduced two new organically managed gardens featuring a variety of herbs, fruits and vegetables. Executive Sous Chef Marc McDowell offers free, interactive chef’s tours of the gardens, “Ai Pono-Eat Well,” Mondays at 3 p.m. The manicured chef’s herb garden has 18 different types of basil, as well as ten varieties of mint, including pineapple, orange and ginger mint.

The larger garden, located behind Jean-Michel Cousteau’s Ambassadors of the Environment center, has an extensive selection of fruits and vegetables, with new additions often arriving weekly.

Fifteen different types of lettuce, 16 varieties of tomatoes and 15 selections of peppers grow in soil produced from The Ritz-Carlton, Kapalua’s new compost.

Chefs from the resort’s restaurants pick fresh herbs, vegetables and fruits daily to prepare select menu items.

The vision of McDowell, the project was created by the culinary team.

McDowell said, “It has been my dream for years to create an organic garden at The Ritz-Carlton, Kapalua, and I am so thrilled that with the teamwork of fellow chefs and the Landscaping Department, it has become a reality.”
