A new form of Dom Pérignon Rosé has been created – Dom Pérignon Rosé Œnothèque. Launching worldwide on May 21, it forms a critical part of a Sotheby’s auction to be staged at the Mandarin Oriental Hong Kong. The standard Dom Pérignon Rosé is made form Pinot Noir and Chardonnay grapes and matures over ten years of aging on the lees. However, a limited number of these bottles have been set aside for a further decade and even longer (depending on the vintage) and are only now being released as Dom Pérignon Rosé Œnothèque. Serena Sutcliffe MW, Worldwide Head of Wine at Sotheby’s said: “We are particularly thrilled that the worldwide launch of Dom Pérignon Rosé Œnothèque should be with Sotheby’s in Hong Kong. This is a very exciting moment since these extraordinary Champagnes have never before been released and they come direct from the cellars in Epernay.” – From Luxury Insider
