To serve, pour 1/8 oz of Pernod Absinthe into a chilled rocks glass, then place 1 large ice cube over it. Slowly pour 4 oz of the cooked cocktail from the freezer over the ice and let it louche the absinthe at the base. Garnish with a grapefruit zest.
